When it comes to Indian dates varieties.. Rajasthan is estimated to produce nearly 2,800 tonnes of date palm this year, a rise of 75% as compared to last year and more than triple the first harvest of the fruit in 2015-16, as per the records.
the government started promoting date palm farming in 12 districts across Rajasthan. The largest cultivation area is in Bikaner district followed by Jaisalmer.
Through Rashtriya Krishi Vikas Yojana, Goodness Farm has connected with 3 organic dates cultivars in Jaisalmer.
Where they grow varieties like Barhee, Khuneji, Khalas, Medjool, Khadravi, Jamli and Sagai by season.

Preparation: High-quality dates are selected and cleaned to remove any impurities or foreign matter. The dates are pitted to remove the seeds.
Grinding: The prepared dates are then ground to a fine paste or slurry. This mixture is homogenized to ensure a smooth consistency and sieved.
Spray Drying: The date slurry is fed into a spray dryer, which is a large chamber equipped with a high-pressure nozzle or atomizer. The slurry is sprayed into the chamber as fine droplets, where it comes into contact with hot air.
Drying Process: As the droplets of date slurry travel through the chamber, they are exposed to hot air, which rapidly evaporates the moisture content. This process effectively dehydrates the droplets, resulting in the formation of fine particles or powder.
Collection: The dried date particles are then collected from the bottom of the spray dryer chamber. Further sieved, to achieve the desired particle size and consistency and is packed.
Overall, the spray drying process allows for the production of dates powder with a long shelf life, improved solubility, and enhanced flavor and aroma compared to traditional drying methods. And this product doesn’t have any extra ingredient added except for dates. There’s no preservatives or additives used during the process or in the product.
