Production of Organic Palm Jaggery Powder
At Goodness Farm, we follow a traditional, chemical-free process to produce pure, organic palm jaggery powder, ensuring that its nutrients, minerals, and natural flavor are preserved.
✅ Step 1: Sourcing Fresh Palm Sap
- The process begins with careful tapping of the sap (neera) from organically grown Palmyra palm trees (Borassus flabellifer).
- The sap is collected in hygienic clay pots to prevent fermentation we use the lemon skins and not the limestone.
✅ Step 2: Slow Evaporation & Concentration
- The fresh sap is boiled in large iron or clay vessels over a low wood fire to retain its natural taste and nutrients.
- No chemicals, bleaching agents, or synthetic additives are used.
✅ Step 3: Solidification & Drying
- Once the syrup thickens, it is poured into trays and allowed to cool naturally while its sifted using the ladle to make powder.
- The jaggery is then shade-dried to enhance shelf life.

- Glycemic Index (GI): 35–40 (lower than refined sugar, which has a GI of ~65).
- Glycemic Load (GL): Low to moderate, depending on the serving size.
- The low GI and GL make palm jaggery a better option for diabetics compared to white sugar, as it leads to a slower rise in blood sugar levels. However, moderation is key.
