Millets are an excellent source of all essential nutrients like protein, carbohydrates, fat, minerals, vitamins, and bioactive compounds. However the nutrients, it’s absorption rate and bioavailability depends on the processing of the millets. Since millets also contain high antinutrients, by research conducted by us at Anna University in the department of Food technology in 2016 (published in NATURE JOURNAL), summarises that the antinutrients present in millets could be reduced by processing techniques such as decortication/dehulling, soaking, germination/malting, milling, fermentation, etc..
The best methods were sprouting/ germinating and fermentation of all.
