🛠️ Processing Steps
1. Selection & Cleaning of Grains
Heirloom emmer wheat grains are sourced from organically grown fields.
The grains are cleaned using sieves and air classifiers to remove husk, dust, and foreign matter.
They are then washed using RO-treated water to ensure complete cleanliness.
2. Drying & Conditioning
Cleaned grains are shade-dried or air-dried to bring them to the desired moisture level (around 12–13%) for milling.
They are then conditioned for 6–8 hours to soften the bran and endosperm interface.
3. Milling
The dried and conditioned emmer wheat grains are stone-ground at low RPMs to retain nutrients and fiber.
The flour is kept slightly coarse (120–180 microns) to enhance the texture and traditional mouthfeel of the vermicelli.
4. Dough Preparation
The freshly milled emmer wheat flour is mixed with RO-treated water and a pinch of rock salt.
Cold-pressed coconut oil may be added to improve pliability and mouthfeel.
The dough is kneaded until smooth and rested for 20–30 minutes to hydrate the gluten gently.
5. Vermicelli Extrusion
The dough is fed into a cold-extrusion vermicelli press.
It is extruded into fine strands and cut into uniform lengths (10–12 cm).
Due to the low-gluten nature of emmer, extrusion is done gently to avoid breaking.
6. Drying & Dehydration
The vermicelli is arranged on trays and dried in a hot-air dryer at 45–50°C until moisture content drops below 10%, ensuring shelf stability.
Slow drying helps preserve the natural aroma and fiber integrity.
7. Packing & Storage
Dried emmer wheat vermicelli is packed in eco-friendly, moisture-proof packaging.
Shelf Life: Best used within 6–9 months when stored in a cool, dry place away from direct sunlight.

Ingredients:
- 1 cup emmer wheat vermicelli

- 1/2 cup mixed vegetables (carrot, capsicum, beans)
- Rock salt to taste

Method:
- Boil vermicelli in RO-treated water for 2–3 minutes until al dente. Drain and keep aside.
- Heat oil in a pan. Add mustard, cumin, and curry leaves.
- Add onion and sauté till translucent. Add green chili and vegetables.
- Sprinkle salt and cook till veggies are soft.
- Toss in the cooked vermicelli and stir to mix evenly.
- Garnish with lemon juice and fresh coriander. Serve warm.
