Processing of Foxtail Millet Noodles Using Sprouted Foxtail Millet Flour

- Tapioca Flour – 10%
- Cluster Beans Powder – 2% (for natural binding and elasticity)
- Cold-Pressed Coconut Oil – As required (for dough consistency and texture)
- Rock Salt Powder – As required
- Water – RO treated
Processing Steps
1. Selection & Cleaning of Foxtail Millet (Thinai)
- Premium quality foxtail millet grains are sourced and cleaned thoroughly using RO-treated water and gravity separation to eliminate stones and husks.
2. Sprouting Process
- Soaking: Grains are soaked in RO water for 6–8 hours.
- Germination: Sprouted under controlled temperature (24–27°C) for 24–30 hours to enhance nutrient bioavailability.
- Drying: First shade dried to retain enzymes, then gently heat-dried at <50°C for safe storage and milling.
3. Milling & Blending
- The sprouted millet is stone-milled to a fine flour.
- Mixed in an 88:10:2 ratio with tapioca flour and cluster beans powder to balance softness, elasticity, and structural integrity of noodles.
4. Dough Preparation
- Flour mix is combined with cold-pressed coconut oil, a pinch of rock salt, and RO-treated water.
- Kneaded into a smooth, elastic dough and rested for 25 minutes for optimal moisture absorption.
5. Extrusion & Cutting
- The rested dough is passed through a slow-speed extruder to produce uniform strands.
- Noodle strands are cut and dusted lightly to prevent clumping.
6. Steaming & Pre-Drying
- Steamed for 3–4 minutes to stabilize structure.
- Pre-dried using warm air to eliminate surface moisture and prevent microbial growth.
7. Final Drying & Packaging
- Tray-dried at 45–50°C until moisture content reaches below 10%.
- Packed in eco-friendly, food-grade pouches for extended shelf life.
Shelf Life:
- 6–8 months under cool, dry, airtight conditions.
