🛠️ Processing Steps
1. Selection & Cleaning of Grains
- Indigenous Navara red rice grains are selected for their therapeutic value and deep red pigment rich in anthocyanins.
- Grains are cleaned using air classifiers and water wash to remove dust, husks, and foreign matter.
2. Sprouting Process
- Soaking: Cleaned grains are soaked in RO-treated water for 10–12 hours to activate metabolic enzymes.
- Germination: Soaked grains are allowed to sprout at 28–30°C, 75% humidity for 36–48 hours, enhancing GABA content and bioavailability of micronutrients like zinc and iron.
- Drying: Sprouted grains are dehydrated at <50°C to retain antioxidant properties and prevent enzymatic degradation.
3. Milling
- Dried, sprouted Navara rice is stone-ground into a fine flour (mesh size 100–150) with minimal thermal impact to preserve nutrients.
4. Dough Preparation
- Flour is gradually mixed with RO-treated water until a smooth, pliable dough forms.
- Dough is rested for 20–30 minutes to allow hydration and binding through starch gelatinization.
5. Vermicelli Formation via Extrusion
- Dough is fed into a cold extruder with a vermicelli die.
- Extruded strands are cut into 10–15 cm lengths and air-rested for surface moisture evaporation.
6. Final Drying
- Rested vermicelli is tray-dried at 45–48°C until moisture content is reduced to <10%.
- Ensures safe storage, reduces microbial growth, and enhances shelf life.
7. Packaging & Storage
- Final product is packed in biodegradable or vacuum-sealed moisture-barrier pouches.
- Stored in a cool, dry environment away from sunlight. Shelf life: 6–8 months.

Ingredients:

- 2 cups coconut milk

Method:
