🧈 The Science Behind Ghee’s Changing Texture
Ghee is made up of mostly saturated fats, and just like butter, it responds differently to temperature:
- 🌬️ In Winter, the cooler air allows ghee to solidify slowly, forming fat crystals that give it a grainy, granular texture. This is completely natural — and in fact, a mark of traditionally made, high-quality ghee.
- ☀️ In Summer, the warmth keeps the ghee in a softer, more liquid state. Without solidification, it stays silky smooth or slightly oily.
📚 This change is purely physical — it doesn’t impact the nutrition, taste, or purity of your ghee.

🥛 Why Malai is Less in Summer
As the temperatures rise, so do the cows’ thirst levels. They naturally:
- Drink more water
- Eat slightly less due to heat stress
This causes milk to be more diluted and slightly lower in fat content — which means less malai forms on top when milk is boiled and cooled.
Additionally, heat keeps the milk fat more emulsified, so it doesn’t rise and separate as easily.
🌾 Less malai = slightly less ghee, but rest assured: the nourishment remains intact.
